My Favorite Eggplant Yoghurt Dip
I've always had a weakness for Baba Ghanoush (Eggplant + Yoghurt Dip).And the BBQ last weekend provided an excellent excuse for me to try out this dish for the 1st time.Having examining many recipes over the internet, I finally settled on this- a extraction of all the ingredients I like from the different recipes.Lucky for me, this is really quite a simple dish to prepare.Grilled Eggplant (till soft) - mashed and mixed with Yoghurt, minced Basil leaves+ Coriander+ Parsley, finely chopped Red Onion and Garlic, Lemon Juice and Salt and Pepper to taste.I left it to sit overnight in the fridge, allowing the frangrance from the herb and garlic/ onions to seep into the eggplant.After which, I served it with toasted buttered Pita bread.Well, it was really quite delicious- the smoky flavor of the grilled eggplant and the tangy taste made it an excellent appetiser.And I am glad that my friends enjoyed it!.live.com/CollectionWebService/c.gif?space=littlebleapy&page=RSS%3a+My+Favorite+Eggplant+Yoghurt+Dip&referrer=" width="1px" height="1px" border="0" alt="">.spaces
